GREENVILLE, N.C. (WNCT) -- Cooking for Thanksgiving can take a lot of time and effort, but wowing your guests doesn’t mean you need to spend a lot of money.
We talked to Kris Shultz, head chef at Copper and Vine and Toby Boutilier, chef at the Starlite Café, who showed us some easy and fresh side dishes you can make at home.

Amanda’s Easy and Delicious Mashed Potato Casserole:
Make mashed potatoes…I always make the instant in the microwave.
Add an egg, a package of cream cheese, a small jar of pimentos and a cut-up onion.
Mix all together.
Put in the oven at 350 for 45 minutes.
Sweet Potato bisque
2 lbs of sweet potatoes
1 red onion
1 yellow onion
1 leek stalk
2 tbls of cinnamon
1/3 cup of sugar
6 tbls of butter
Heat all ingredients in a baking dish at 350 degrees for 30 minutes. Mix well in a food processer and pour in a half a cup of heavy cream throughout mixing process
Seasonal Salad
mixed greens
canteloup
candied almonds
craisans
cranberry vinergarette
Pimento Cheese Dip
1/2 lbs of sharp cheddar
roasted red pepper
mayonaise
hot sauce
salt n pepper
Cranberry Sauce
Cranberries
1 cup of sugar,
1 cup of water
Orange zest
Mix and boil for about 10 minutes until it thickens.
Cool and serve
